Caribbean mandarin Mahi Mahi. Fish coated in a caribbean jerk rub (you can make this yourself) in olive oil, fresh chopped parsley and mandarin oranges popped in oven at 375 for about 15 min then flip sides for about 10 more (depends on your oven). Sauteed kale, a new fav of mine to experiment with. This time with shallots, garlic, olive oil (don’t do spanish like I did), s/p, lemon juice and sliced almonds. No left over kale. I never thought I would eat so much kale and enjoy it!
