So my mom, after a car accident in January, sent me this basket with a totally adorable soup kit. Soups are definitely my thing and I usually make them from scratch. But today it’s raining and I don’t want to go to the store, and I have some chicken, so I thought, let’s get that soup kit out again! I love a rainy day… it’s even thundering and lightning! This is very rare for SF… so I’m excited to settle in and enjoy.
Smartly, I split the kit up into two parts knowing that I would certainly get sick of soup and I didn’t want to freeze it as I wasn’t sure how it would hold. The first time I made the soup kit I altered it as well. My key trick for extra pizzazz however is adding TJoes lemon pepper to the soup and to the chicken. Really adds some more flavor. The first time I added kale, this time I added fresh parsley not chopped. I love parsley and have discovered its fantastic health benefits. I also had a potato around, so I chopped it up into super small chunks and also chopped up some celery. And then feeling like I didn’t have enough noodles, I also put some whole wheat spaghetti in the pot, broken up into small pieces. I know I know, I just couldn’t let the kit do it’s job alone. It’s just not the way I roll!
My chicken is perfect every time. In my pix it looks kinda pink, but it’s not. That’s what you get with an iphone sometimes. Anyway I’ll do a separate posting on cooking perfect chicken next. I’ve got it down. A very long time ago, when I was not such a good cook, I in fact did make wooden chicken. But I figured out a fool-proof way to make it perfect every time since and I’m happy to save you from wooden chicken syndrome.
By the way, if you have to cheat or want a good soup mix, get this one. I recommend it.
