It seems that when I’m really craving vodka penne I have to make it, as I can never seem to find it on any restaurant menu anymore. I needed to bone up on how to make it (I made it I think 4 years ago last time and it was amazing!), so I referred to my gem Cooks Illustrated cookbook and modified from there. Even though I know you aren’t supposed to modify from CI, I always to (it’s just how I am). Making a lower fat version using half/half instead of cream makes a slight difference in calories, but your palate will never be the wiser. Pancetta was a great add as well.
